How to make it

  • Soak hijiki and mushrooms in hot water until they are softened and swelled.
  • Sliver the shiitake cap, removing the stem.
  • Cook them in a cup of the soaking liquid, soy sauce, sugar and rice wine while.
  • Meanwhile, boil the soba noodles until just shy of al dente.
  • Toss cooked mushroom mixture into the hot noodles, and sprinkle with paprika.
