How to make it

  • Preheat oven to 450º
  • Beat the eggs with a fork to blend
  • Slowly add flour, beating constantly
  • Stir in salt, milk, and butter
  • Grease a 10", oven-proof skillet and pour batter in
  • Bake 18 minutes at 450º
  • Then lower heat to 350º and bake 10 minutes more
  • Serve with melted butter (or lemon juice) and powdered sugar, or fresh fruit and whipped cream

    I don't know who rated this a 1, but that's crazy! I rated it a 5, because I know this is good. My family always referred to these as Dutch Babies and my husband's family referred to them as Mount Saint Helen's Breakfast (in honor of our local active volcano in Washington State). I love mine smothered in butter with lots of maple syrup. Heaven! I may have to make this for dinner with some yummy crispy bacon. Thanks for sharing! - Natalie
