Portuguese Sweet Bread

- 6 1/2 cups (about) unsifted shopping list
- 2/3 cups sugar shopping list
- 1 tsp. grated lemon peel shopping list
- 1/4 tsp. ground mace shopping list
- 1 package active dry yeast shopping list
- 2/3 cup potato water shopping list
- 1/2 cup milk shopping list
- 1/2 cup margarine shopping list
- 3 eggs (at room temperature) shopping list
- 1/2 cup unseasoned mashed potatoes shopping list
- Confectioners sugar shopping list
How to make it
- Combine 1 1/2 cups flour, sugar, lemon peel, mace and undissolved yeast.
- Heat potato water, milk and margarine to 120 to 130 degrees. Add to dry ingredients; beat 2 minutes.
- Add eggs, mashed potato and 1/2 cup flour. Beat 2 minutes. stir in more flour to make a soft dough.
- Place in greased bowl; turn to grease top. Cover; let rise until doubled, about 1 3/4 hours.
- Punch dough down, roll out to 16 x 10 inches. roll up.
- Place steam side down, in greased 10 inch tube pan. pinch ends to form ring.
- Cover; let rise until doubled, about 1 hour.
- Bake at 350 degrees for 40 minutes or until done.
- Cool in pan 5 minutes. Remove and dust with confectioners sugar. (optional)
