Mmmmm... we love hamhocks prepared this way. This recipe serves 4 to 6 people. It all depends on the appetites.

Ingredients
  • 2-3 medium sized smoked hamhocks, or 2-3 pounds smoked pork neckbones
  • 5-6 garlic cloves, coarsely chopped or leave whole
  • 4 medium to large onions, cut in half
  • 1 Bay leaf
  • Optional: a good pinch of hot pepper flakes
  • 2 pounds collard greens, or 3 to 4 large bunches
  • *If fresh collard greens are not available, use frozen
  • 1 teaspoon salt
  • Hot sauce ie. Tobasco or similar

Directions
  1. Put hamhocks or neckbones in large pot of cold water.
  2. Add garlic, onions and Bay leaf.
  3. Boil for about 2 hours, adding extra water when necessary.
  4. If you're using fresh greens, wash / rinse them well.
  5. Stack greens one on top of the other and roll together.
  6. Slice rolled greens into strips.
  7. When hamhocks begin to fall apart, add greens to the pot.
  8. Add as many as you can fit into the pot, then let them wilt down to make room to add more.
  9. *I like to remove the middle piece from the leaf by folding the leaves inwards on both sides and then just pulling the stem upwards.
  10. Continue until all greens are in the pot.
  11. *If you're using frozen greens, simply pour them right from the package into the pot when hamhocks begin to fall apart.
  12. Add salt if you desire, cover, and cook for 30 minutes over medium heat, stirring every few minutes.
  13. When greens are tender, use a slotted spoon so that the liquid drains out.
  14. Sprinkle hot sauce on greens, if desired.
  15. Serve with homemade biscuits.

This looks really goo and I think the red pepper flakes add a lot to this dish. Wolfpackjack has a similar recipe on his site and I have been thinking about collards ever since. I'm checking out the farmers market tomorrow.

Love it! Sometimes I use dandelion greens instead of collards for a change.


Any greens will do! By the way, I am a great one for mixing greens if they have to be frozen ones and adding spinach to other frozen greens gives the whole pot a nicer, fresher seeming texture.
