Mocha Cheesecake

- Crumb Crust: shopping list
- 1 1/2 cups graham cracker or digestive biscuits crumbs shopping list
- 6 tablespoons butter, melted shopping list
- 1/4 cup granulated sugar shopping list
- 1 teaspoon ground cinnamon shopping list
- 6 ounces of semisweet chocolate shopping list
- 1 1/2 pounds cream cheese shopping list
- 1/2 cup granulated sugar shopping list
- 2 large eggs shopping list
- 1 cup heavy cream shopping list
- 1/3 cup double strength coffee shopping list
- 1 teaspoon vanilla extract shopping list
How to make it
- You will need a 9 inch springform pan for this cheesecake.
- Make the crust first.
- Mix the graham cracker crumbs with the melted butter, granulated sugar and the cinnamon.
- Grease the bottom and partly up the sides of a springform pan.
- Press the crumbs as smoothly as possible across the bottom of the pan and then partly up the sides of the springform pan.
- Bake for 10 minutes in a 350 degree oven.
- Preheat oven to 350 degrees for the cake.
- Melt the chocolate in the top part of a double boiler.
- In a large mixing bowl, beat together the cream cheese and sugar until light.
- Add the eggs, one at a time, beating thoroughly after each.
- Beat in the cream.
- Pour the melted chocolate slowly into the cheese mixture and add the coffee and vanilla.
- Mix to blend the ingredients thoroughly.
- Pour the mixture into the prepared crust and bake for 45 minutes or until the edges of the cake are puffed up slightly.
- When checking on the cake do not actually take the cake out of the oven unless you want to see a big crack across the surface of the cake.
- Just take a peek.
- Cool in the oven with the door cracked open for about an hour.
- Then cool to room temperature before putting it into the refrigerator.
- Chill for at least 2 hours.

I have tried it and it was wonderful. So creamy and smooth and not too sweet. I liked the fact that the biscuit base just melted in your mouth.
