Ingredients

How to make it

  • preheat cast iron skillet to medium heat
  • saute onions and peppers in butter in skillet until onions are transparent
  • while onions and peppers cook, beat the eggs, dice the tomotos, and slice the avacodos into long strips.
  • add chorizo to skillet, cook approx 5 min.
  • add eggs, salt and pepper, and cook until almost done, then remove from heat.
  • (remember...eggs will continue to cook in cast iron after heat is off)
  • add cheeze and let melt.
  • Serve with slice of avacado and tbsp. of diced tomatos.
  • add to tortilla or eat by itself
  • Enjoy...
