Southwest Scramble

- 12 large eggs shopping list
- 1/2 lb. chorizo shopping list
- 1 red onion (diced) shopping list
- 2 fresh jalepanos (coarsly chopped) shopping list
- 1 red bell pepper shopping list
- grated mexican cheeze mix shopping list
- 2 tbsp. unsalted butter shopping list
- salt and pepper to taste shopping list
- 2 large avacados shopping list
- 2 tomatoes shopping list
How to make it
- preheat cast iron skillet to medium heat
- saute onions and peppers in butter in skillet until onions are transparent
- while onions and peppers cook, beat the eggs, dice the tomotos, and slice the avacodos into long strips.
- add chorizo to skillet, cook approx 5 min.
- add eggs, salt and pepper, and cook until almost done, then remove from heat.
- (remember...eggs will continue to cook in cast iron after heat is off)
- add cheeze and let melt.
- Serve with slice of avacado and tbsp. of diced tomatos.
- add to tortilla or eat by itself
