Tofu Loaf

- 1 small head of garlic, crushed shopping list
- 1-2 inches fresh ginger, chopped finely shopping list
- 1 medium red onion, chopped finely shopping list
- 2 Tbs olive oil shopping list
- 1 1/2 lbs. extra firm tofu, mashed shopping list
- 1 cup rolled oats shopping list
- 1/3 cup tomato paste or ketchup shopping list
- 1/3 cup soy sauce shopping list
- 3 Tbs Dijon mustard shopping list
- 1/2 cup parsley shopping list
- 1 egg (optional, helps hold, but not necessary) shopping list
How to make it
- Pre-heat oven to 350 degrees
- Sautee garlic, ginger and onion in olive oil
- Mix together all ingredients
- Press into a well oiled glass loaf pan (the acid in the tomatoes will react with metal and affect the flavor)
- Bake for 1 hour
- Cool 5-10 minutes before serving
