This recipe is lowfat and one of the best tasting breads I have had. Make sure that the fresh pears you use for this recipe are perfectly ripe and sweet. Picture will soon be on it's way!

Ingredients
  • 2 cups whole wheat pastry flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 3/4 tsp baking soda
  • 1/4 tsp ground nutmeg
  • 1/4 tsp cinnamon
  • 3/4 cup pear nectar
  • 1 tsp vanilla extract
  • 1 1/3 cups finely chopped peeled pears(about 1 1/2 medium)
  • 1/4 cup plus 2 tbs dried currants or dark raisins(optional)
  • 1/4 cup chopped walnuts(optional)

Directions
  1. Place the flour, sugar, bakingpowder, baking soda, nutmeg, and cinnamon in a large bowl, stir to mix well.
  2. Add the nectar, vanilla, and pears, and stir just until the dry ingredients are moistened.
  3. Fold in the currants or raisins and, if desired , the walnuts.
  4. Coat an 8 x 4 inch loaf pan with nonstick cooking spary, and spread mixture evenlyin the pan.
  5. Bake at 325* for about 45 minutes.
  6. Remove from oven, and let sit for 15 min.
  7. Invert the loaf onto a wire rack, turn right side up and cool to room temperature.
  8. Wrap the loaf in plastic wrap or aluminum foil, and store 8 hours or over night before slicing and serving.
  9. Overnight storage will develop the flavors and give the loaf a softer, moister crust.
  10. Refrigerate any leftovers not eaten within 24 hours.

We were visiting my dghtr and fam this weekend, and I wanted to show them I COULD make something healthy, and your pear bread was first on my mind - we loved it! It is so moist, and packed with the sweet pears (I let them ripen til they were good and sweet and juicy!!)...this is a keeper, Mich - I will be making this again (I can see strawberries, or other berrires, maybe pineapple??)...lots of variations with this lowfat recipe! You're the best!!!!
