Chicken Osso-buco Style

- 2 Tbs. veg. oil shopping list
- 8 bone-in skinless chicken thighs(about 21/2 lbs) shopping list
- 11/2c finely chopped carrots shopping list
- 1 diced onion shopping list
- salt and pepper shopping list
- 1 finely chopped celery stalk shopping list
- 1 141/2 oz. can stewed tomatoes shopping list
How to make it
- Heat oil in a lg. skillet over med-high heat.. Add chicken thighs,sprinkle with salt and pepper and cook till golden on all sides;transfer to a bowl. Add carrots,onion and chopped celery to the pan and saute until lightly browned. Return chicken to the skillet;stir in stewed tomatoes and bring to a boil. Reduce heat to low;cover and simmer till chicken is cooked thru,about 25 mins.
