Chicken Osso-buco Style Recipe
Chicken with a nice sauce with carrots,onion and celery. Garnish with parsley. Serve over couscous.

Ingredients
  • 2 Tbs. veg. oil
  • 8 bone-in skinless chicken thighs(about 21/2 lbs)
  • 11/2c finely chopped carrots
  • 1 diced onion
  • salt and pepper
  • 1 finely chopped celery stalk
  • 1 141/2 oz. can stewed tomatoes

Directions
  1. Heat oil in a lg. skillet over med-high heat.. Add chicken thighs,sprinkle with salt and pepper and cook till golden on all sides;transfer to a bowl. Add carrots,onion and chopped celery to the pan and saute until lightly browned. Return chicken to the skillet;stir in stewed tomatoes and bring to a boil. Reduce heat to low;cover and simmer till chicken is cooked thru,about 25 mins.
