Insalata Caprese

- 8 oz ball of fresh mozzarella shopping list
- 2 ripe medium tomatoes shopping list
- 1/4 C basil leaves (packed) shopping list
- 3 Tbsp olive oil shopping list
- 1 Tbsp balsamic vinegar shopping list
- salt and freshly ground pepper to taste shopping list
How to make it
- Slice the mozzarella and tomatoes 1/8"-1/4" thick.
- On a plate, alternate layers of mozzarella and tomato to form a circle.
- With a pair of scissors, cut basil into shreds. Scatter the shreds over the plate.
- Drizzle the plate with olive oil and vinegar.
- Season with salt and pepper.

YUM!!! Another thing you can do is reduce a cup of balsamic vinegar (just let it simmer over med-lo heat til it thickens) and it makes a nice sauce to drizzle over the salad.

This is a great dish. I would suggest using Buffalo Mozzarella if you can get it. Unfortunately I can't. :(
