My mother was catalan - from north of Barcelona, and Spanish dishes from Spain are a far cry from Spanish dishes in the US - try this light, tasty and very juicy dish!

Ingredients
  • 1 whole chicken, cut up into serving pieces cleaned and dried
  • 2 large or 4 small fresh lemons, washed well, then halved.
  • 3 cloves fresh garlic minced OR 2 teaspoons garlic powder
  • 1/2 yellow onion minced OR 1 teaspoon onion powder
  • 2 teaspoons fresh oregano chopped finely OR dried oregano
  • 1/2 teaspoon each kosher salt and fresh ground pepper
  • 3 tablespoons olive oil - more or less.
  • extra fresh oregano or parsley for garnish.

Directions
  1. Preheat oven to 350.
  2. Place chicken pieces in baking medium depth baking dish.
  3. Slice lemons in half and squeeze juice all over chicken.
  4. Tuck squeezed halves into the pan with chicken, sliced side UP.
  5. Combine garlic, onion, oregano, salt and pepper and rub over the chicken.
  6. Drizzle chicken with olive oil.
  7. Place uncovered in oven for about 40 minutes or until chicken is done.
  8. Remove from baking dish to platter and garnish with the baked lemon halves, and sprinkle with a bit more of fresh oregano or parsley.
  9. This goes well with a crisp green salad, maybe a side of rice flavored slightly with saffron.
