How to make it

  • Preheat oven to 350.
  • Place chicken pieces in baking medium depth baking dish.
  • Slice lemons in half and squeeze juice all over chicken.
  • Tuck squeezed halves into the pan with chicken, sliced side UP.
  • Combine garlic, onion, oregano, salt and pepper and rub over the chicken.
  • Drizzle chicken with olive oil.
  • Place uncovered in oven for about 40 minutes or until chicken is done.
  • Remove from baking dish to platter and garnish with the baked lemon halves, and sprinkle with a bit more of fresh oregano or parsley.
  • This goes well with a crisp green salad, maybe a side of rice flavored slightly with saffron.

    just finished eating this....SO yummy! The only change I made was I used chunky split chicken breasts ('cause they were on sale) and thus cooked about 55 minutes. 5 stars from me! :)
