Fish Or Seafood Casserole Recipe

Ingredients
  • 21/2 lbs. haddoc,shrimp,lobster or combination
  • 1/2 lb. mushrooms,sliced
  • 1/4 c butter,divided
  • 2 Tbs flour
  • 11/4 c milk
  • 1/2 lb yellow american cheese,shreaded
  • salt and pepper
  • 4 Tbs dry sherry
  • 1/2 c bread crumbs

Directions
  1. Cook fish in small amt. of water until it begins to flake,approx. 8-10 min. Shrimp or lobster should only be cooke for 2 mins. Flake fish into large pieces. Saute mushrooms in 2 Tbs butter. In another saucepan,melt 2 Tbs butter and whisk in flour until smooth. Add milk gradually,stirring constantly till thickened. Add cheese and continue cooking until cheese melts,stirring to blend well. Add salt and pepper,if desired. Add sherry,mushrooms and fish. Place in a greased casserole and top wit bread crumbs. Bake at 300 for 20 mins.
  2. This is a low fat version of seafood newberg.

This was absolutely awesome. We added a little zing by grating some Asiago and then adding the breadcrumbs.


I was wondering if you could replace the sherry with something else? Would it be missed?
