Ingredients
  • 1 med. onion, minced
  • 1 clove garlic, minced
  • 1 lb. lean ground lamb (ground beef can be substituted)
  • 2 T olive oil
  • 1 t. salt
  • 1/4 t. pepper
  • 1 t. oregano
  • 1 cup chopped tomato
  • 1 cup tomato sauce
  • 3/4 lb. elbow macaroni
  • 3/4 C dry bread crumbs
  • 1/4 C grated romano cheese
  • CREAM SAUCE
  • 4 T butter
  • 6 T flour
  • 2 1/4 C milk
  • 1 t. salt
  • 1/8 t. pepper
  • 2 egg yolks beaten w/ 2 T milk

Directions
  1. Saute onion, garlic, and lamb or beef in oil in a 2-quart saucepan 8-10 minutes. add salt, pepper, oregano tomatoes and tomato sauce. cover and simmer 30 minutes.
  2. preheat oven to 350 degrees
  3. cook macaroni according to package directions, rinse in cold water and drain.
  4. melt better in a saucepan blend in flour, slowly add 1 3/4 cups milk and heat, stirring constantly until very thick. blend in salt and pepper.
  5. off heat, measure 1 1/4 cups sauce into a bowl, beat in remaining 1/2 cup milk and set aside.
  6. mix 1/2 cup of the bread crumbs into the meat mixture. sprinkle remaining crumbs over the bottom of a greased 2 1/2 quart casserole.
  7. layer in half the macaroni, spread it with all the meat sauce, half the thin cream sauce and half the cheese. top with remaining macaroni and thin cream sauce.
  8. spread thick cream sauce over all, along with remaing cheese. bake, uncovered, 30 minutes, reduce heat to 325 and bake 10 minutes longer.
  9. enjoy!
