How to make it

  • Slice the kumquats into rounds, discarding the bitter seeds.
  • Combine the arugula, parsley, dates and kumquats in a large serving bowl.
  • Whisk salad dressing, season with salt and pepper.
  • Pour over salad and toss.
  • Top with parmesan shavings.
