How to make it
- Arrabbiata, pronounced [ah-rah-bee-AH-tah], in Italian means "angry" or "furious." Arrabbiata sauce is basically a marinara sauce with hot red chile flakes in it. Like other Italian dishes, the ingredients in this sauce varies from cook to cook but always contains spicy, hot red chile. Other ingredients may include one or more of these items: wine, capers, pancetta (bacon), olives, onion, green onion, parsley, mint, Italian Seasoning, etc.
- Heat the oil in a heavy medium saucepan over medium heat. add the red chile flakes. Add the garlic and saute until just turning golden brown and tender, about 1 minute. Do not let the garlic brown. Add the tomatoes and chopped basil. Bring the sauce to a very slow simmer, stirring often. When the sauce is thick and done season with salt and black pepper.
