Banana Bread

- 2 C. all-purpose flour shopping list
- 3/4 C. sugar shopping list
- 3/4 t.baking soda shopping list
- 1/2 t. salt shopping list
- 1 1/4 cups toasted walnuts (or pecans) shopping list
- 3 very ripe bananas (about 1 1/2 cups) mashed well shopping list
- 1/4 C. plain yogurt shopping list
- 2 lg. eggs, beaten lightly shopping list
- 6 Tbl. butter-melted and cooled shopping list
- 1 Tbl. vanilla extract shopping list
How to make it
- place rack to lower-middle position
- pre-heat oven to 350
- grease and flour bottom only of regular loaf pan
- or bottom and sides of nonstick pan
- set aside
- whisk flour,sugar,baking soda,salt, and walnuts together in large bowl: set aside
- mix mashed bananas,yogurt,eggs,butter,and vanilla with wooden spoon
- lightly fold banana mixture into dry ingredients with rubber spatula until combined
- scrape batter into loaf pan
- bake until loaf is golden brown and toothpick inserted comes out clean
- about 55 minutes
- cool in pan for 5 minutes
- transfer to wire rack
- serve warm or at room temperature
