Green Chili Rice Casserole

A long time favor recipe that is perfect with most meat dishes but I especially like it with pork chops. It's easy and quick to make which is another reason it's a favorite! Try it, you'll like it! Ingredients
- 2 cups uncooked rice (instant) shopping list
- 2 cups water shopping list
- 1 cube butter or margarine shopping list
- 1-1/2 lbs jack cheese; cubed shopping list
- 1-1/2 cup sour cream shopping list
- 2 cans diced ortega green chili's (4oz each) shopping list
- 1 cup longhorn cheddar cheese shopping list
How to make it
- Add butter to water and bring to a boil; stir in rice, cover and let sit for 8 min or until rice is cooked.
- In large bowl add jack cheese, hot rice, 1 cup sour cream, and chili's.
- Add rest of sour cream on top** after putting in oblong casserole dish.
- Grate longhorn cheese and sprinkle on top of casserole.
- Cover with foil and bake at 300ยบ for 1 hour.
- ** I omit the sour cream on top.
