Green Chili Rice Casserole Recipe

Ingredients

2 cups uncooked rice (instant)

2 cups water

1 cube butter or margarine

1-1/2 lbs jack cheese; cubed

1-1/2 cup sour cream

2 cans diced ortega green chili's (4oz each)

1 cup longhorn cheddar cheese

Directions

Add butter to water and bring to a boil; stir in rice, cover and let sit for 8 min or until rice is cooked.

In large bowl add jack cheese, hot rice, 1 cup sour cream, and chili's.

Add rest of sour cream on top** after putting in oblong casserole dish.

Grate longhorn cheese and sprinkle on top of casserole.

Cover with foil and bake at 300º for 1 hour.

** I omit the sour cream on top.

Brown rice should also be just as good but wouldn't look as pretty.

Hello, thanks for the recipe. My husband, Archie, said it was different and that it was okay. I didn't like it but I don't like rice most of the time unless it is just butter and sugar on it for breakfast. Have a beautiful day!
