Ingredients
  • 2 12-ounce bottles of beer (preferably lager)
  • 1 tablespoon chopped canned chipotle chilies in adobo sauce, plus 1 tablespoon adobo sauce
  • 1 teaspoon ground cumin
  • 1 large onion, chopped
  • 1 pound dried black beans, rinsed
  • 1 1/2 pounds boneless pork butt (pork shoulder)
  • Kosher salt
  • 1/2 cup sour cream
  • 1/2 cup store-bought refrigerated fresh salsa
  • 1/4 cup fresh cilantro
  • If You Don't Have a Slow Cooker: Heat oven to 300° F. Follow the recipe above using a Dutch oven or large casserole. Bake, covered, until the pork pulls apart easily, 4 hours.

Directions
  1. In the bowl of a slow cooker, combine the beer, 3 cups water, the chilies, adobo sauce, cumin, onion, beans, pork, and 1 1/2 teaspoons salt.
  2. Set the slow cooker to high and cook, covered, until the beans are tender and the pork pulls apart easily, 4 hours.
  3. Using a fork, separate the pork into large pieces.
  4. Divide among individual bowls and top with the sour cream, salsa, and cilantro.

Am bookmarking this one! It's raining all week here, so this will be perfect.


So no need to soak beans overnight? Are they really done in 4 hours or do you usually turn down to low and cook for another 4 or so hours?


Well, this didn't go too well. After 4 hours in a slow cooker on high, the beans were hard and I had to add more liquid. After 5 hours, the beans were still not close to being done...soooo, I turned the cooker down to low and it is still cooking after a total of 7 1/2 hours. I think maybe canned black beans would have worked out better. All the ingredients are there for great flavor!


Mine turned out great...maybe your cooker is not as hot as mine...if you use canned beans on high for 4 hours you will have mush. Did you add all the liquid?
