Peas And Zucchini Recipe

An easy delicious way to get some of your green vegetables.

Ingredients
- 1 Tbl EVOO or vegetable oil
- 1 medium onion, chopped (1/2 cup)
- 1 Tbl chopped fresh or 1 tsp dried parsly flakes
- 2 cloves garlic, finely chopped
- 2 medium zucchini, cut into 1/2" slices (4 cups)
- 2 Tbl dry wihite wine or vegetable broth
- 1 Tbl of lemon juice
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 10 ounce pkg of frozen green peas, rinsed to separate
- 1 Tbl chopped fresh or 1 tsp dried parsley flakes
Directions
- Heat oil in a 12" skillet over medium high heat
- Cook onion, 1 Tbl parsley and the garlic in the oil
- Stir in all remaining ingredients, except peas and 1 Tbl parsley
- Heat to boiling; reduce heat and simmer about 4 minutes, stirring occasionally until zucchini is crisp tender
- Stir in peas and cook until peas are hot, sprinkle with remaining parsley
