How to make it

  • Soak raisins in 1/4 cup rum for 1/2 hour before using.
  • Mix flour, sugar and lemon rind then cut in butter until mixture resembles coarse crumbs.
  • Add egg yolk and 1 tablespoon milk then mix gently to form a dough.
  • Pat into bottom of a tube pan that has sides only greased.
  • Press dough up sides of pan 1".
  • Toss together bread crumbs and melted butter then spread evenly over pastry crust.
  • Toss apple slices, lemon juice and 1/4 cup of sugar then spread apple mixture over crumbs.
  • Drain raisins reserving rum then sprinkle raisins over apples.
  • Bake in a preheated 350 oven for 15 minutes.
  • Beat eggs and sugar until thick and lemon colored then stir in milk and reserved rum.
  • Pour custard over apples and bake at 350 for 50 minutes.
  • Cool completely in pan before serving.

    This is the best looking coffee cake recipe I think i have seen. that estate sale really yielded amazing recipes!
