Armadillo Eggs Dated 1970 Recipe
This is a must at all of my parties that my husband and I host every month. These things are addicting and so full of wonderful flavor. Enjoy

Ingredients
  • 24 fresh medium jalapeno peppers
  • 1 pound mild pork sausage
  • 2 cups all purpose baking mix
  • 16 ounce package shredded cheddar cheese
  • 1 tablespoon crushed red pepper flakes
  • 1 tablespoon garlic salt
  • 16 ounce package pepper jack cheese cubed

Directions
  1. Preheat oven to 325.
  2. Cut a slit down side of each jalapeno.
  3. Remove and discard seeds and as much pulp as possible then trim off stems and set aside.
  4. Combine sausage, baking mix, cheddar, pepper flakes and garlic salt in large bowl and mix well.
  5. Insert two cubes of pepper jack into each jalapeno.
  6. Pinch off some of the sausage mixture and shape it around each jalapeno covering completely.
  7. Arrange eggs evenly on greased baking sheet and bake 25 minutes.
