Lemon Squares

The refreshing taste of lemon peel, and juice make this dessert a tantalyzing choice to finish off one of your great suppers.Or a snack is good too!
Ingredients
- 1 C all purpose flour shopping list
- 1/2 C butter or margarine, softened shopping list
- 1/4 C Imperial sugar Confectioners powdered sugar or Dixie Crystals Confectioners powdered sugar shopping list
- 1 C Imperial sugar Extra Fine Granulated sugar or Dixie Crystals Extra Fine Granulated sugar shopping list
- 2 tsp grated lemon peel shopping list
- 2 T lemon juice shopping list
- 1/2 tsp baking powder shopping list
- 1/4 tsp salt shopping list
- 2 eggs shopping list
How to make it
- Preheat oven to 350 degrees.
- Mix thoroughly flour, butter and powdered sugar in a small bowl. Press evenly with hands in bottom and about 5/8 inch up sides of an ungreased 8-inch square pan.
- If dough is sticky, flour fingers.
- Bake 20 minutes. Beat remaining ingredients in a medium bowl on medium speed until light and fluffy.
- Pour over hot crust. Bake just until no indentation remains when touched lightly in center, about 25 minutes. Let stand until cool, then cut into about 1 1/2 inch squares. .
