Ingredients

How to make it

  • Cook bacon in a skillet over medium-low heat, turning slices occasionally until crisp and browned. 8-10 minutes.
  • Drain on paper towel-lined plate and keep warm.
  • Measure the fat in pan. (There should be 2-3 T.) Add enough oil to equal 5 T of total fat in the pan.
  • Whisk the vinegar, mustard, garlic, salt and pepper into the fat in pan. Keep warm.
  • In a large bowl, combine the spinach and apple.
  • Spoon the warm bacon mixture over the spinach and apple. Toss to coat.
  • Divide among 4 plates.
  • Crumble the bacon over spinach and top with the cheese.

    Hi kukla. I too was worried about too much grease. With the other ingredients, it balances itself beautifully and ever so slightly wilts the spinach. Great combination. I was surprised.

    Oooo!! I've made one very very similar to this -- and you're right, it IS delicious! I was worried that the warm bacon fat dressing would be a bit 'greasy', but the garlic, vinegar, and apple cut it beautifully! Another great recipe! TY, Chihuahua :)
