Spinach And Apple Salad With Warm Bacon Vinaigrette

- 3 Strips bacon shopping list
- 2-3 T olive oil shopping list
- 2 T red wine vinegar shopping list
- 1 t Dijon mustard shopping list
- 1 small clove garlic, minced shopping list
- 1/8 t salt shopping list
- 1 bunch (10 oz.) spinach, coarse stems trimmed (about 5 C loosely packed) shopping list
- 1 macintosh apple peeled and cut into 1/2" pieces shopping list
- 8 Shavings romano cheese, each about 1" x 2" shopping list
- 1/8 t ground black pepper shopping list
How to make it
- Cook bacon in a skillet over medium-low heat, turning slices occasionally until crisp and browned. 8-10 minutes.
- Drain on paper towel-lined plate and keep warm.
- Measure the fat in pan. (There should be 2-3 T.) Add enough oil to equal 5 T of total fat in the pan.
- Whisk the vinegar, mustard, garlic, salt and pepper into the fat in pan. Keep warm.
- In a large bowl, combine the spinach and apple.
- Spoon the warm bacon mixture over the spinach and apple. Toss to coat.
- Divide among 4 plates.
- Crumble the bacon over spinach and top with the cheese.

Oooo!! I've made one very very similar to this -- and you're right, it IS delicious! I was worried that the warm bacon fat dressing would be a bit 'greasy', but the garlic, vinegar, and apple cut it beautifully! Another great recipe! TY, Chihuahua :...more
