Traditional Lemon Delicious

- 3 eggs, sepeprated shopping list
- 1/2 cup caster sugar shopping list
- 30g melted butter shopping list
- 1 cup milk shopping list
- 2 tspns grated lemon rind shopping list
- 1/3 cup lemon juice shopping list
- 1/2 cup selfraising flour shopping list
- 1/2 cup caster sugar, extra shopping list
How to make it
- Beat egg yolks and suger in small bowl with electric mixer until thick and creamy.
- Put in large bowl.
- Stir in butter, milk, rind, lemon juice and sifted flour.
- Beat egg whites with electric mixer until soft peaks form.
- Add extra sugar gradually, be3at until dissolved between additions.
- Fold into lemon mixture in 2 batches.
- Pour into lightly greased ovenproof dish (6 cup capacity), or in 6 individual dishes (1 cup capacity)
- Place in baking dish with enough hot water to come halfway up side of dish.
- Bake in moderate oven about 50 minutes (about 30 minutes for individual diches or until pudding is set.
