This Lemon Delicious is, well... lets just say... Delicious !!

Ingredients
  • 3 eggs, sepeprated
  • 1/2 cup caster sugar
  • 30g melted butter
  • 1 cup milk
  • 2 tspns grated lemon rind
  • 1/3 cup lemon juice
  • 1/2 cup selfraising flour
  • 1/2 cup caster sugar, extra

Directions
  1. Beat egg yolks and suger in small bowl with electric mixer until thick and creamy.
  2. Put in large bowl.
  3. Stir in butter, milk, rind, lemon juice and sifted flour.
  4. Beat egg whites with electric mixer until soft peaks form.
  5. Add extra sugar gradually, be3at until dissolved between additions.
  6. Fold into lemon mixture in 2 batches.
  7. Pour into lightly greased ovenproof dish (6 cup capacity), or in 6 individual dishes (1 cup capacity)
  8. Place in baking dish with enough hot water to come halfway up side of dish.
  9. Bake in moderate oven about 50 minutes (about 30 minutes for individual diches or until pudding is set.
