Fettuccine and pesto make a great quick week night meal..Serve with a nice loaf of bread and green salad.

Ingredients
  • 1 cup fresh basil leaves
  • 3/4 cup olive oil
  • 1/4 cup grated Parmesan cheese
  • 1 tsp minced garlic
  • 1 tbls. pine nuts
  • 1/2 tsp salt
  • 1/4 tsp. ground pepper
  • 12 oz. fettuccine

Directions
  1. Add 1st 7 ingredients to a blender or processor and process until smooth.
  2. Cook fettuccine in 6-8 qts. boiling water until al dente. About 5 minutes
  3. Drain pasta, reserving 2 tbls. of it's water
  4. Add water to pesto and blend
  5. Toss hot fettuccine with pesto.
