A great Guacamole for dipping or for that perfect taco.

Ingredients
  • 2 ripe avacados
  • 1/2 red onion, minced (~1/2 cup)
  • 1 or 2 serrano chiles, stems and seeds removed, minced
  • 1 Tbsp cilantro leaves, finely chopped.
  • 1 Tbsp of fresh lime or lemon juice
  • 1/2 tsp coarse sea salt
  • Dash freshly grated black pepper.
  • .Note: if using as a dip, dice one small ripe tomato into small chunks.

Directions
  1. Cut avacados in half, Remove seed. Scoop out avacado from the peel, put in mixing bowl.
  2. Mash the avacado with a fork.
  3. Add the chopped onion, cilantro, lime/lemon juice, salt, and pepper, then mash some more.
  4. Start with 1/2 of one serrano chili, add to avacado, then test for hotness. Add more if desired.
  5. Serve immediately.
  6. Note: If using as a dip, mix in the diced tomatoes just before serving.

This reminds me of the guacamole I had in Santa Fe. It exploded with flavor. So good.
