Slow food, not in a crockpot. Oven baked in covered Dutch oven. Pork chops layered with onions, spices, topped with good 'ole hickory smoked bacon, sprinkled with cracked black pepper, paprika. Worth the wait.

Rosie, This is the best sounding recipe! Makes me wnat to drop everything and run to the kitchen and begin right now! I'll rate you now because I KNOW my family will just love this. I'm having a buffet for about 20 ladies in another month or so. I may put this on the menu. Could slow cook in the Dutch oven and serve up hot. Thanks for sharing.

Broke in my new Dutch Oven with this recipe. I had some Ragin' Cajun spice blend (Steve Raichlen, Sauces, Rubs, and Marinades, Bastes, Butters, and Glazes) sitting on the shelf and in need of a home. I would try something more savory next and stay away from a whole southwest kick. The pork chops were very very soft and juicy. I could see how easy this would be to do layer after layer of onions and chops making it very easy to feed a crowd.
