Ingredients

How to make it

  • beat butter and shortening at medium speed of and electric mixer until creamy
  • gradually add sugars, beating well
  • add eggs and vanilla. beat well
  • combine the flour, baking soda, salt, and the cinnamon.
  • add to butter mixture. beating well
  • stir in the almonds, coffee beans and the candy
  • cover and chill dough if desired
  • drop dough by heaping teaspoonfuls onto an ungreased baking sheet
  • bake at 350' F for 10 to 11 minutes or until golden
  • cool on baking sheet for 1 minute
  • remove to a wire rack and cool completely
  • makes approx. 4 dozen

    These are the best cookies EVER! I followed the recipe exactly, except for two substitutions (because I didn't have ingredients). I used one cup of butter rather than the 1/2 cup each butter and shortening. I also used a 1/2 bag of the toffee chips, rather than breaking up the candy bars. Other than that, I followed the recipe exactly and they were AWESOME - sending them to my daughter's boyfriend who is deployed in Iraq... After the first batch came out of the oven, I wanted them to have a bit more coffee taste, so I stirred in 3 teaspoons of instant espresso powder to the remaining batter. I think that may have even made them better! Chewy, crunchy and a guaranteed hit for the coffee lovers in your life - try them!
