Ingredients
  • 4 large eggs
  • 1 10 oz. pkg. frozen spinach, thawed and drained of liquid
  • 1/2 cup finely chopped leeks (onions can be substituted)
  • 1/2 cup chopped ham
  • 1 tsp. dried basil
  • pepper to taste
  • 1/4 cup milk
  • 1/2 cup Gruyere cheese, shredded

Directions
  1. Preheat oven to 325
  2. Mix spinach, leek, ham, basil, and pepper in a mixing bowl
  3. Divide mixture in 4 ramekins, pressing on the bottom then going halfway up the cup
  4. Break eggs into ramekins
  5. With a tbls., pour 1 tbls. of milk over each egg
  6. Put ramekins in a baking dish and pour boiling water 1 inch up
  7. Bake for 25 minutes
  8. Sprinkle with cheese
