Ingredients

6 slices bacon fried and crumbled.

2 unpeeled large baking potatoes cleaned

3 Tbsp vegie oil

1/2 tsp garlic salt

1/8 tsp pepper

1/4 cup bbq sauce

1 cup shredded colby cheese

1/3 cup sliced green onion

1/4 cup chpd fresh parsley or 4 tsp dried parsley

1/2 cup sour cream optional

Directions

Line two large baking sheets with foil and preheat oven to 450 degrees.

Cut potatoes into 1/4 inch slices. Place potato slices in a large resealable bag with the pepper and the garlic salt and 1 Tbsp of vegie oil. And shake to coat.

Arrange potatoes in a single layer on the baking sheets.

Bake until lightly brown about 30 min. Brush with bbq sauce. mix bacon,colby,onions and parsley in bowl. Sprinkle over potatoes. Bake about 5 min. longer.
