Pasta Pancake Recipe
An old recipe f rom my grandmother. The original was too plain for me so I started adding. Served with a salad, it makes a nice lunch.

Ingredients
  • 4 C. cooked spaghetti or other pasta
  • 4 slices bacon
  • ¼ C. chopped onion
  • ¼ C. chopped red and green pepper
  • 2 eggs, lightly beaten
  • 2 T. cream
  • ¼ C. grated Parmesan cheese
  • ¼ tsp. dried oregano
  • Fresh basil, snipped (or 1/4 tsp. dried)
  • garlic pepper seasoning to taste
  • dash cayenne pepper
  • 2 tsp. butter
  • 1 T. extra virgin olive oil

Directions
  1. Cook bacon crisp, remove from skillet add onion and peppers to skillet and cook till tender.
  2. Remove from skillet to mixing bowl. Crumble bacon into bowl, add remaining ingredients except butter and EVOO.
  3. In a large skillet, heat oil and butter. Add the spaghetti mixture, spreading it evenly.
  4. Cook the pancake over med heat until its bottom is golden brown, about 10 min.
  5. Flip the pancake over to cook the other side, or slide it onto a plate and back into the skillet.
  6. Cook for another 8-10 min so that it is nicely browned on both sides.
  7. Slide it onto a plate, and serve immediately.
