Vegetarian Hay Stacks

- 1 large package of BOCOBurger (ground meat style) OR 1 lb lean hamburger if you prefer.) shopping list
- 1 large onion (minced) shopping list
- shredded cheese or Mexican mix cheese shopping list
- 1 large tomato chopped shopping list
- 1 head of lettuce chopped fine shopping list
- 1 can of pinto beans drained (or use refired beans if you prefer--just heat them first) shopping list
- 1 avacado cubed shopping list
- sour cream shopping list
- salsa shopping list
- taco seasoning or your own favorite mix of Mexican seasoning shopping list
- 1 large bag of corn chips (I prefer the small size frito's not the big dippers.) shopping list
How to make it
- Put BOCOBurger in a non-stick skillet and brown slightly.
- Add the taco seasoning and liquid as package suggests
- When the taco meat has bubbled add the beans.
- Assembly: Place a handful of corn chips on a warm plate.
- Add a couple of spoonfuls of taco meat and beans.
- Add a bit of cheese and then onion, tomato, lettuce and avacado as desired.
- Top with a dollop of sour cream and salsa and dig in.
