My family has had this many times and for those who prefer ground beef you can substitute hamburger for the BOCOBurger.
Easy to make for a light lunch or supper.

You can use TVP (texturized vegetable protien, or Morning stars "Griller crumbles" instead of Boca burgers.
You can also add black olives.

we use ranch dressing in place of the sour cream and we also use cucumbers and orange/red/green peppers.

My hubby's fam is seventh-day adventist and hay stacks are a huge favorite - filling, custom, and easy. my fam is hooked on it as well. glad to see others enjoying it too. the most important thing is the hot beans! we prefer it without meat. its basically a healthy taco salad. ;)
