Beef Bourguignon Recipe
This dish is delicious. Very rich with the wine and brandy. Great meal for company.

Ingredients
  • 1(8oz.) pkg. bacon,cut into 1" pieces
  • 20 small white onions.
  • 3lbs. beef for stew,cut into 2" chunks
  • all purpose flour
  • 1 lg. carrot chopped
  • 1 lg. onion chopped
  • 1/4c brandy
  • 2 garlic cloves crushed
  • 2 tsp. salt
  • 1/2tsp. thyme
  • 1 bayleaf
  • 1 bottle red burgandy
  • 1 lb. mushrooms,sliced

Directions
  1. In a 6qt. dutch oven,over med-high heat, cook bacon until browned;stirring occasionally. With slotted spoon remove bac on to paper towl to drain;set aside. Discard all but 3Tbs drippings and cook small white onions till lightly browned,stirring occasionally. Remove with slotted spoon,put in small bowl ;set aside.
  2. Meanwhile in plastic bag,coat meat with flour. In the drippings in Dutch oven,over med-high heat,cook meat several pieces at a time on all sides till browned. Remove as they brown. Reduce heat to medium,to drippings,add the chopped onions andcarrots and cook over med heat,stirring frequently till tender,about 5 mins. Return beef to dutch oven;pour brandy over all and set aflame with a match.
  3. when flaming stops,add reserved bacon,garlic,salt,thyme,pepper bayleaf and burgandy. Cover and bake in 325 oven for 31/2 hours or till fork tender. About 1 hour before done,heat 10" skillet over med.and cook mushrooms in 2 Tbs. butter till browned,about 7 mins.
  4. Meanwhile in a small bowl with a spoon mix 2Tbs. butter with 2 Tbs. flour till smooth. Remove dutch oven from the oven. Into hot liquid in dutch oven add flour mixture 1/2tsp. at a time stirring after each addition until blended. Add reserved onions and mushrooms to duch oven,cover and bake till onions are fork tender. Serve
  5. Note:Can be done ahead and reheated. May need some thinning with additional wine and water.
