Mushroom Pasta Scampi Recipe
This recipe comes from the Mushroom Council. It combines three of my favorites, mushrooms, shrimp and fresh spinach. Enjoy

Ingredients
  • 8 ounces linguine
  • 3 tablespoons olive oil
  • 1 pound fresh mushrooms, sliced
  • 1 tablespoon garlic, minced (or to taste)
  • 1 pound large fresh shrimp, peeled and deveined
  • 1 (10 ounce) bag fresh spinach, stems removed and torn
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 cup Parmesan cheese, grated

Directions
  1. Cook pasta according to package directions, reserving 1/2 cup pasta cooking water when draining.
  2. In large skillet, heat oil.
  3. Add mushrooms and saute until mushrooms are softened and most of the liquid is evaporated, about 5 minutes.
  4. Add garlic and shrimp and saute until shrimp turn pink, stirring.
  5. Stir in spinach and reserved pasta cooking water. Cook until spinach is wilted, about 1 minute.
  6. Toss shrimp mixture with cooked linguine, red pepper flakes and Parmesan cheese.
  7. Season to taste with salt if desired.
