How to make it

  • Cook pasta according to package directions, reserving 1/2 cup pasta cooking water when draining.
  • In large skillet, heat oil.
  • Add mushrooms and saute until mushrooms are softened and most of the liquid is evaporated, about 5 minutes.
  • Add garlic and shrimp and saute until shrimp turn pink, stirring.
  • Stir in spinach and reserved pasta cooking water. Cook until spinach is wilted, about 1 minute.
  • Toss shrimp mixture with cooked linguine, red pepper flakes and Parmesan cheese.
  • Season to taste with salt if desired.

    OHHHH sounds heavenly. Thank you sooo much for posting. When I can dig myself out of the snow bank will hit the store for this recipe.
