How to make it

  • Cream butter and brown sugar untill smooth
  • add mashed bananas and beat till smooth
  • add eggs coconut milk 1 cup of buttermilk vanilla shredded coconut and coconut flavoring, mix
  • place dry ingredients in a large ixing bowl and whisk together until mixed
  • stir in liquid and mix thuroughly if the batter is too stiff add the remaining half cup of buttermilk
  • spray or butter your bundt or cake pan and line with sliced banans
  • generously sprinkle the sliced bananas with brown sugar
  • pour batter gently over the sliced bananas and brown sugar
  • bake at 250 for an hour

    Hi Vickycummins, the remaining half cup is in case the batter is too stiff, it varies a little depending on humididty, the liquid volume of your eggs etc.

    Oh does this sound GOOD!! I can smell it baking! Can't wait to try this one ! In the recipe you said 1 1/2 cups buttermilk, but then you said add 1 cup buttetmilk, when do you use the other 1/2 cup?
