Pecan Encrusted Perfect Pork Loin

- 1-1/2 cups apple cider or apple juice shopping list
- 1 4-5 pound boneless pork loin roast shopping list
- 1-1/4 cups packed brown sugar shopping list
- 2-1/2 tablespoon spicy brown mustard shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon pepper shopping list
- 5 garlic cloves, minced shopping list
- 1-1/3 cups chopped, (almost finely chopped) pecans shopping list
- NOTE: may adjust any of the seasonings shopping list
How to make it
- Combine apple cider and pork loin roast in large zip-top plastic bag
- Seal and marinate in fridge for about 8 hours.
- Remove roast from bag, discard the cider
- Combine sugar, mustard salt, pepper, garlic
- Rub over roast
- Roll the roast in the chopped pecans
- Place roast in pan (may line in foil)
- Bake at 325 or 350 degrees for about 2 hours
- Or until thermometer registers 160 degrees
- Remove from oven
- Let stand for 10 minutes
