Pecan Encrusted Perfect Pork Loin Recipe
I attended a dinner, and this was served. It is delicious. The ingredients may be adjusted for a smaller or bigger pork loin roast. Or even pork tenderloins.

Ingredients
  • 1-1/2 cups apple cider or apple juice
  • 1 4-5 pound boneless pork loin roast
  • 1-1/4 cups packed brown sugar
  • 2-1/2 tablespoon spicy brown mustard
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 5 garlic cloves, minced
  • 1-1/3 cups chopped, (almost finely chopped) pecans
  • NOTE: may adjust any of the seasonings

Directions
  1. Combine apple cider and pork loin roast in large zip-top plastic bag
  2. Seal and marinate in fridge for about 8 hours.
  3. Remove roast from bag, discard the cider
  4. Combine sugar, mustard salt, pepper, garlic
  5. Rub over roast
  6. Roll the roast in the chopped pecans
  7. Place roast in pan (may line in foil)
  8. Bake at 325 or 350 degrees for about 2 hours
  9. Or until thermometer registers 160 degrees
  10. Remove from oven
  11. Let stand for 10 minutes
