Minestrone Soup

- 3 tablespoons olive oil shopping list
- 4 cloves garlic chopped shopping list
- 2 onions chopped shopping list
- 2 cups chopped celery shopping list
- 5 carrots chopped shopping list
- 2 cups chicken broth shopping list
- 2 cups water shopping list
- 4 cups tomato sauce shopping list
- 1 cup canned kidney beans drained shopping list
- 1 (15 oz) can green beans shopping list
- 2 cups baby spinach rinsed shopping list
- 3 zucchinis chopped shopping list
- 1 tablespoon fresh oregano shopping list
- 2 tablespoons fresh basil shopping list
- salt and pepper to taste shopping list
- 1/2 cup elbow pasta shopping list
How to make it
- In large pot heat olive oil, and saute garlic.
- Add onion and saute for 5 minutes.
- Add celery and carrots and saute for 3 minutes
- Add chicken broth, water and tomato sauce, bring to a boil, stirring frequently
- Reduce heat and add kidney beans, green beans, spinach,zucchini, oregano, basil, salt and pepper.
- Simmer for about 45 -60 minutes
- In mean time cook elbow macaroni
- when macaroni cooked place 2 tablespoons pasta into soup bowls
- ladle with soup on top and sprinkle with paremsan cheese
- ( I always add the pasta to the soup pot)
