Mostaccioli With Tomatoes Recipe
Really good side dish with almost anything. Especially good with salmon. Low-fat dish

Ingredients
  • 1/4c olive oil
  • 2Tbs. balsamic vinegar
  • 3 cloves garlic
  • 2 oz. fresh basil
  • 1tsp. salt
  • 1/4tsp. black pepper
  • 1lb. mostaccioli or other tub shaped pasta,cooked al dente
  • 11/2lbs. ripe tomatoes.cut in 1" cubes
  • 1c. calamata olives,pitteed and halved

Directions
  1. In a blender or food processor,combine olive oil,vinegar and garlic. Add half of the basil and whirl 1 min. Add salt and pepper. Pour over mostaccioli while pasta is still warm. Add tomatoes and olives;toss. Garnish with remaining whole basil leaves
