Mushroom Spread

- 2 tablespoons vegetable or olive oil shopping list
- 8 ounces white button mushrooms, coarsley chopped shopping list
- 8 ounces baby portobello mushoooms, coarsely chopped shopping list
- 2 tablespoons fresh shallot, chopped shopping list
- 3 tablespoons dry sherry shopping list
- 1/2 teaspoon salt shopping list
- 1/4 teaspoon ground black pepper shopping list
- 1/4 teaspoon dried thyme (I have used marjoram instead) shopping list
- 3 ounces cream cheese shopping list
- 1/3 cup mayonnaise shopping list
How to make it
- In large skillet, heat oil over medium-high heat.
- Add mushrooms and saute until golden brown, about 5 minutes.
- Add shallot and saute until softened. Add sherry, salt, pepper and thyme.
- Cook, stirring, 1 minute.
- Let cool.
- In food processor, combine mushrooms mixture, cream cheese and mayonnaise. Process until almost smooth.
- Transfer to covered container and chill at least one hour.
- Serve with crackers, fresh vegetables, etc.
