How to make it

  • FOR THE SPICE MIX: In a large bowl, mix together oil, sumac (or lemon rind), cumin, coriander, paprika, cinnamon, garlic, salt, and pepper.
  • Cut the beef lengthwise into 2-inch (5 cm) wide strips; then, cut crosswise into 1/4-inch (5 mm) thick slices. Add to the spice mix and toss to combine. Cover and refrigerate for at least 1 hour, and up to 24 hours.
  • Thread onto pre-soaked bamboo skewers (or, use metal skewers if you prefer).
  • Place kewers on greased, preheated frill over medium heat. Close the lid and grill, in batches if necessary and turning once only, until browned slightly and just pink inside, about 3 minutes.

    Thanks for the nutritional content...like the trace of carbs! Yahoo. Must make these soon, they have my favorite flavors...love cumin and coriander, lemon...What can I say, I love this! Can I get someone to drive for me?
