Ingredients
  • 1 Large lemon
  • Salt
  • Olive oil
  • Small salmon filet, frozen or not frozen dosn't matter

Directions
  1. You must have a sharp uncreated knife!!
  2. Cut salmon into very thin pieces, like paper thin (Some times using a frozen salmon can be easyer to cut thin as it won't crumble as easily)
  3. Place paper thin slices on a plate (is better if none are over lapping)
  4. Squeeze an entire lemon onto plate
  5. Shake salt onto salmon evenly so every piece has about one or two pinches of salt on it.
  6. Add olive oil as much as you like really, if you like it to be extra zesty dont add as much. Usually a good drizzle, like about 2-3 table spoons per regular size dinner plate is good.
  7. Let plate sit in fridge or cool area for 5 minutes.
  8. You should notice that the salmon has changed to a light pink after the 5 minutes. This means it is done!

Brilliant!

I book marked this and will give it a try.
This is a hot trend these days, the acid cooks the fish without heat.
