Linguini With Arugula Pine Nuts And Parmesan Cheese Recipe
LINGUINE WITH ARUGULA PINE NUTS AND PARMESAN CHEESE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Brooks Estate in Waxahachie, Texas in 1994.

Ingredients
  • 1 pound linguine
  • 1/2 cup olive oil
  • 4 ounces arugula trimmed
  • 1/2 cup freshly grated parmesan cheese
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1/2 cup toasted pine nuts
  • Additional freshly grated parmesan cheese

Directions
  1. Cook linguine in boiling salted water until just tender but still firm stirring occasionally.
  2. Meanwhile heat oil in heavy large skillet over medium heat.
  3. Add arugula and stir until just wilted about 30 seconds then remove from heat.
  4. Drain pasta and return to pot then add arugula and toss well.
  5. Add parmesan, salt and pepper to taste then toss well.
  6. Transfer to bowl and sprinkle with pine nuts.
  7. Serve immediately passing additional parmesan separately.
