Linguini With Arugula Pine Nuts And Parmesan Cheese

- 1 pound linguine shopping list
- 1/2 cup olive oil shopping list
- 4 ounces arugula trimmed shopping list
- 1/2 cup freshly grated parmesan cheese shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 1/2 cup toasted pine nuts shopping list
- Additional freshly grated parmesan cheese shopping list
How to make it
- Cook linguine in boiling salted water until just tender but still firm stirring occasionally.
- Meanwhile heat oil in heavy large skillet over medium heat.
- Add arugula and stir until just wilted about 30 seconds then remove from heat.
- Drain pasta and return to pot then add arugula and toss well.
- Add parmesan, salt and pepper to taste then toss well.
- Transfer to bowl and sprinkle with pine nuts.
- Serve immediately passing additional parmesan separately.
