Beef and Beer Chili

- 1 medium red onion chopped shopping list
- 1 medium bell pepper chopped shopping list
- 8 o.z extra lean ground beef shopping list
- 4 cloves garlic, crushed shopping list
- 1-1/2 Tbsp. chili powder shopping list
- 2 tsp. ground cumin shopping list
- 2 tsp. cayenne pepper or to taste shopping list
- 1 tsp. sugar shopping list
- 1/2 tsp. salt shopping list
- 1/2 tsp. dried oregano, crushed shopping list
- 1 (19-oz.) can dark red kidney beans, drained shopping list
- 1 (14.5 oz.) diced tomatoes, undrained shopping list
- 1 (14-oz.) can beef broth shopping list
- 1 (12-oz.) bottle beer any brand shopping list
- 1 Tbsp. yellow cornmeal shopping list
- 1 Tbsp. lime juice shopping list
How to make it
- Combine first 4 ingredients in a large Dutch oven over medium heat.
- Cook 5 minutes until beef is browned, stirring to crumble.
- Stir in chili powder, cumin, cayenne, sugar and salt, cook 1 minute.
- Add oregano and next 4 ingredients (through beer) to pan, bring to boil.
- Reduce heat and simmer 15 minutes.
- Stir in cornmeal, cook 5 minutes.
- Stir in lime juice.
