Biker Mikes Big Daddy Meat Loaf

- 2 pounds ground beef shopping list
- 3 large eggs, lightly beaten shopping list
- 1 cup fine, dry breadcrumbs shopping list
- 4 garlic cloves, minced shopping list
- 1 medium onion, chopped shopping list
- 2 roma tomatoes, seeded and chopped shopping list
- 1 1/2 cups (6 ounces) shredded monterey jack cheese shopping list
- 1/4 firmly packed brown sugar (I use a bit less) shopping list
- 1/2 cup chopped fresh cilantro shopping list
- 1/4 cup worcestershire sauce shopping list
- 2 tablespoons hot sauce shopping list
- 1-1/2 – 2 teaspoons salt shopping list
- 1 teaspoon pepper shopping list
How to make it
- Combine all ingredients.
- Shape into a 9- x 5-inch loaf, and place on a lightly greased wire rack in a foil –lined baking pan.
- Bake at 350° for 45 minutes; increase heat to 425°, and bake 15 more minutes or until done.
- Let meat loaf stand 10 minutes before serving.

This is very good. I left the sugar out, didn't see the need for it, and addded sliced mushrooms.
