Ingredients

How to make it

  • Melt butter
  • Add onion and cook over medium heat until tender
  • Stir in parsley
  • Sift flour, salt and cayenne
  • Add to onion mixture and cook until bubbly
  • Add chicken broth and milk
  • Cook and stir constantly for about 2 minutes or until thickened
  • Put onion mixture, chicken, and 1/3 cup bread crumbs in a mixing bowl and combine
  • Refrigerate for an hour
  • Make 8 balls or patties with mixture
  • Heat oil in fry pan
  • Coat patties with bread crumbs
  • Dip in egg
  • Coat again with bread crumbs
  • Fry over medium heat until golden brown
  • Gravy
  • Melt butter over medium heat
  • Whisk in flour, basil, and salt and pepper
  • Cook until bubbly
  • Add milk, stirring constantly until mixture starts to thicken
  • Cook for a minute or 2 longer stirring

    I love croquettes....make them with leftover turkey every Thanksgiving. I do happen to have some leftover chicken staring me down in the frig, this might be the perfect recipe to use up the cooked meat. Good stuff, thanks for the reminder.

    I love chicken croquettes, but can't seem to find them anymore. Howard Johnson's use to have a frozen ones, years ago. Came with a little package of gravy...oh the memories!! I used to always ask for them as a kid as a special dinner...lol Can't want to try this one!! Thank you!!

    Ohhhhh, my yesss!! LOVE chicken croquettes! I had them quite often as a child in Ohio. One time I had them at a diner in Iowa. Theirs were made into little "pone" shapes and smothered in a light yellow creamy gravy. I'll never forget those...
