Mexican Fudge Not A Sweet Recipe
Super simple and easy to make. Makes 81 one-inch squares. Served at room temperature or chilled, it's simple and so deliciously Mexican!

Ingredients
  • 1 (4 ounce) can chopped green chilies, well-drained
  • ¼ teaspoon cayenne pepper or red pepper
  • 1 pound (4 cups) grated cheddar cheese
  • 6 eggs, slightly beaten

Directions
  1. Preheat oven to 350º.
  2. Grease a 9-inch square baking pan.
  3. Spread peppers in prepared pan.
  4. Sprinkle with cayenne pepper.
  5. Cover with cheese.
  6. Pour beaten eggs over cheese.
  7. Bake for 30 minutes or until firm in the center. Cool.
  8. Cut into 1-inch squares and serve

How does this count as Fudge?


It is just a resemblance based on the name. It is similar in size when cut to a piece of fudge.

Alterations


Um, I would alter the title.


it is a finger food, but I did add that it is not a sweet


I make mine with Monteray Jack cheese, but I'll have to try it with cheddar too. I serve this as a side with Mexican meals. I think it tastes better the second day, after the flavor of the chilies have absorbed into the cheese! This is a wonderful dish!!!
