Jalapeno Onion Marmalade Recipe
This is a sauce for a pork tenderloin that took third place (Chef Grahma) in the 2001 Valentine Competition

Ingredients
  • 4 Cup chopped vidalia onion
  • Salt and Pepper to taste
  • 3 Tablespoon olive oil
  • 2 Jalapenos (fresh, seeded, and minced)
  • 2 Tablespoon honey
  • 3-4 Tablespoon red wine vinegar
  • 1/4 Cup water

Directions
  1. Season onion with salt pepper to taste.
  2. Saute in hot oil in skillet over medium heat until soft add jalapeno to onion and cook one minute.
  3. Add vinegar and honey and simmer stirring constantly until liquid is evaporated. Add 1/4 cup water to skillet and simmer constantly for 10 minutes or until mixture is thickened.
  4. Season to taste.
