How to make it

  • Whisk the egg whites into fluffy meringue and add the egg yolk.
  • Add the sugar, flour, baking powder, semolina and lemon rind. Mix well.
  • Pour into a large baking pan.
  • Bake for about 45 minutes at 180 degrees.
  • Leave to cool and prepare syrup.
  • Bring the water to boil with the sugar, vanilla and lemon juice.
  • Boil for 5 minutes.
  • Cut cake into pieces while still in the baking pan and pour the syrup over it.
  • Let it cool to room temperature.

    This iis also really great with orange instead of the lemon (rind in cake mix and juice in the syrup)..... but perhaps not with 20 eggs!!
