How to make it

  • Cut the chicken breasts into thin, diagonal slices. Dip the slices in the egg white and then in the cornstarch.
  • Cut the cucumbers in half lengthwise and then slice diagonally into 1/4-inch-thick pieces.
  • Heat the oil over a low heat and fry the chicken gently. Remove the chicken and drain.
  • Heat a wok and, when it is hot, pour in 2 Tbl. oil; stir-fry the ginger and, once it has started to give off its aroma, add the cucumbers.
  • Add the chicken and sprinkle with rice wine and the sauce ingredients. Stir-fry quickly over high-heat.
  • Finally, add a few drops of sesame oil.
