Stir-fried Chicken And Cucumbers Recipe

Ingredients
  • 7 ounces Chicken Breasts
  • 1/2 Egg white
  • 1 tsp. Cornstarch
  • 2 Cucumbers
  • Oil for Frying
  • 1 small slice Ginger root
  • 1 Tbl. Rice Wine
  • a few drops Sesame Oil
  • For the Sauce:
  • 1 Tbl. Soy Sauce
  • 1 Tbl. Sugar
  • 1/2 tsp. Salt
  • 1 pinch of Pepper

Directions
  1. Cut the chicken breasts into thin, diagonal slices. Dip the slices in the egg white and then in the cornstarch.
  2. Cut the cucumbers in half lengthwise and then slice diagonally into 1/4-inch-thick pieces.
  3. Heat the oil over a low heat and fry the chicken gently. Remove the chicken and drain.
  4. Heat a wok and, when it is hot, pour in 2 Tbl. oil; stir-fry the ginger and, once it has started to give off its aroma, add the cucumbers.
  5. Add the chicken and sprinkle with rice wine and the sauce ingredients. Stir-fry quickly over high-heat.
  6. Finally, add a few drops of sesame oil.
