Veggie Cheese Mold Recipe
This is a great appetizer to serve with crackers or veggies.

Ingredients
  • 1 package (4-serving size) lemon flavor gelatin
  • 3/4 cup boiling water
  • 2 cups (16 ounces) cottage cheese
  • 3/4 cup sour cream
  • 1/4 pound Roquefort or bleu cheese, softened
  • 2 teaspoon seasoned salt
  • 3/4 teaspoon worcestershire sauce
  • 1 teaspoon lemon juice
  • 2 Tablespoons finely cut parsley or chives
  • 2 Tablespoons celery, finely sliced

Directions
  1. Dissolve gelatin in boiling water.
  2. Combine cottage cheese, sour cream, Roquefort cheese, seasoned salt, worcestershire sauce and lemon juice in large bowl.
  3. With mixer at low speed, beat until smooth.
  4. Gradually blend in gelatin.
  5. Stir in celery and chives/parsley and pour into a 4 cup mold.
  6. Chill until firm, approximately 3-4 hours.
  7. Unmold and serve as an appetizer with assorted crackers and assorted fresh veggies.
  8. Serves 6 - 8
